Hmmm.  The Mac Classic works fine, eh?  On the same line, and all, hmm?  Well,
then I think I can guess what the server software is doing differently--I
suspect that the server is sending the computer an "identify" escape sequence,
such as <ESC>Z or something.  The Mac Classic responds with some escape
sequence of its own, to identify itself, and the server is happy.  On the other
hand, the Model 100 does NOT send an identifying escape sequence, and so the
server defaults to its odd behavior.
 
You have not mentioned anything about how the server can tell what type of
"terminal" is hooked to it (i.e. Mac Classic or Modem 100).  Nor have you
mentioned anything about escape sequences.  Nonetheless, if you were somehow
able to switch the Mac on the line after the odd character substitutions were
happening on your Model 100 [and without losing carrier], I think you would see
the problem continues.
