I have been toying with the idea of a data acquisition project for my 100 for a while. I am a software/sales engineer for a instrument manufacturer, so this kind of project hits close to home. I don't have any software written just yet (I plan to write in 100% assembly). I have looked into attaching devices. To use the RS232 port, you really have to have a smart device -- one with a processor running the show. The small Forth boards from New Micros are good for this type of project. The alternative is to use the M100 as the "engine" and hook an A to D convertor into the spare I/O space in the M100 memory map. I'm just getting started with my ideas; I'll have details later. In the meantime, I'd like more info on the device that you're planning to read data from.
